Cooking recipes for the holidays: eggplant parmesan

We thought we’d suggest traditional Sicilian recipes. They are easy to prepare dishes and rich in flavor, suitable for the whole family and fun to prepare together. All the ingredients are easily found nearby *. This time we chose the eggplant parmesan.

Classic summer dish with ingredients typical of this season. Easy to prepare, maybe a bit long for cooking Eggplant but tasty and suitable for the whole family.

  • 4 round aubergines
  • 700 g of fresh tomatoes or passata to make the sauce
  • Caciocavallo or provolone dolce, sliced

  • Parmesan and/or pecorino
  • Basil

Start with the preparation of the Eggplant

Take a baking dish or a roasting pan and pour a few tablespoons of sauce, then a layer of Eggplant, add tomato sauce, grated Parmesan cheese and cheese slices. Continue to layer and finish with tomato sauce, parmesan cheese and some basil leaves.

Put in preheated oven and bake for 30 ‘ to 160/180 degrees, depending on the type of oven.

. . . If you don’t fancy cooking pour a little oil into a bowl, dip the Eggplant slices, drain and place on a baking sheet covered with parchment paper. Bake for 15 minutes, being careful to turn them every now and then.
