Cooking holiday recipes: pasta alla Norma

We thought of suggesting Sicilian tradition recipes. They are easy to prepare and rich in flavor. They are family-friendly and fun to prepare all together. All ingredients are easily available nearby*. For the first recipe we chose “pasta alla Norma”.

Pasta alla Norma

It is a substantial dish but suitable for the beautiful season. The main ingredient is eggplant, a fruit (yes yes a fruit) typically summer, although you can probably find it in supermarkets all year long. However, we are sure that when you buy them here, you will find them with a pleasantly different flavor.

Pasta alla Norma

Suggested doses are for 4 people. If you want to eat it even for younger children (2-4 years old), we recommend that the salt and spices be kept to a minimum.


  • 320 g of pens
  • 350 g of tomato pulp or 1 pack of 500 g tomato paste
  • 100 grams of hard ricotta
  • 2 small eggplants
  • 1 clove of garlic
  • Basil
  • oil
  • salt
  • pepper


Wash and dry the aubergines and cut them into slices of about half inch thick without peeling them. Relax the slices on a plate and sprinkle with salt and let them rest for about half an hour. Now that they are softened, rinse and dry them.

In a pan, warm two tablespoons of oil, peel a garlic clove and add the tomato pulp. Cook for 10 minutes, salt, pepper. Grate ricotta.

Fry the slices in hot oil, drain them over kitchen absorbing paper. Get them warm.

Meanwhile, fry the pens, drain them to the tooth and place them on the plate. Sprinkle with grated ricotta cheese, half tomato sauce and basil leaves. Above the slices of fried eggplants, sprinkle with the remaining ricotta and cover with tomato sauce.
